I think that it has to do with the sodium ions activating ion channels that will block bitterness and enhance other flavors like sweetness or umami. That’s not a definitive explanation, but would explain why most sodium based additives are flavor enhancers, like MSG or other additives. Any food scientists, share you answers please.

I mean sometimes restaurants purposely put slot of salt so you will be thirsty. And then once you read the menu it claims “pay for refills”. Other times it is because some food may be a little too bland so putting any seasoning would make it taste better. Have you ever had a bland French fry?
